How to poach chicken breast fillets

Perfectly cooked chicken fillets are really easy using this simple poaching method. I love cooking them this way because the chicken stays moist and absorbs the flavours of the stock.

The instructions below explain the basic way to cook the chicken but you can add herbs or spices to the stock to impart extra flavour. The cooking liquid can be used as a base for a delicious chicken soup.

Three steps to perfectly poached chicken breast fillets

  • Put the fillets in a pan and pour over enough chicken stock to cover.
  • Put a lid on the pan and bring the mixture to the boil then take the pan off the heat and allow the pan to sit (lid on) for 20 – 25 minutes.
  • Test the chicken is cooked through to the centre – if not return the pan to the heat, bring back to the boil and allow to sit for another few minutes.
